Honey Lemon Quinoa Salad is a refreshing and nutritious dish that combines the nutty flavor of quinoa with a zesty honey lemon dressing. This salad is perfect as a light lunch, a side dish, or even a main course when topped with your favorite protein.
Ingredients:
- 1 cup quinoa
 - 2 cups water or vegetable broth
 - 1 cup cherry tomatoes, halved
 - 1 cucumber, diced
 - 1/4 cup red onion, finely chopped
 - 1/4 cup fresh parsley, chopped
 - 1/4 cup crumbled feta cheese (optional)
 - 3 tbsp olive oil
 - 2 tbsp honey
 - 2 tbsp fresh lemon juice
 - 1 clove garlic, minced
 - Salt and pepper to taste
 
Instructions:
- Rinse the quinoa under cold water.
 - In a medium saucepan, bring the water or vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and let cool.
 - In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
 - In a small bowl, whisk together the olive oil, honey, lemon juice, minced garlic, salt, and pepper.
 - Pour the dressing over the quinoa salad and toss to combine.
