Ingredients:
- 2 large carrots, peeled and sliced
 - 2 parsnips, peeled and sliced
 - 1 large sweet potato, peeled and diced
 - 1 red onion, cut into wedges
 - 2 tbsp olive oil
 - 3 tbsp honey
 - 1 tbsp balsamic vinegar
 - 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
 - Salt and pepper to taste
 
Instructions:
- Preheat your oven to 400°F (200°C).
 - In a large mixing bowl, combine the olive oil, honey, balsamic vinegar, thyme, salt, and pepper.
 - Add the carrots, parsnips, sweet potato, and red onion to the bowl and toss to coat evenly with the honey mixture.
 - Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
 - Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and caramelized, stirring halfway through cooking.
